I am trying to eat a sustainable diet, does extra virgin olive oil fit in?
Not only is EVOO part of a healthy diet, it is also part of a healthy environment. The International Olive Council’s True Healthy Olive Cultivar (THOC) project is focused, in part, on the olive sector’s carbon footprint. Agriculture and livestock contribute ~14% of greenhouse gas emissions, but studies show that olive trees actually fix Co2 in the soil. In fact, if we take all of the land used to grow olive trees in the world, it can store the equivalent of Co2 produced by a city of 7 million people! Another way to think about the environmental health benefits of EVOO is that for every liter of EVOO produced, olive trees remove 10kg of Co2 from the atmosphere.
